Waldorf Salad

Ingredients

1 cup boiling water

2/3 cup dried cherries, or cranberries

½ cup mayonnaise

1 Tbsp. sour cream

2 Tbsp fresh lemon juice

1 tsp sugar

1 cups very thinly sliced peeled celery

4 fuji apples, cored & thinly sliced (Do this shortly before serving to avoid discoloring)

1 cup red seedless grapes, halved

¼ cup toasted pecans or walnuts.

Directions

Whole romaine or butter lettuce leaves to line plates

 

Bring water to boil and remove from heat.  Add the dried fruit to the pan to soften for one minute.  Drain well and set aside.

 

In a small mixing bowl, whisk together the mayonnaise, sour cream, lemon juice and sugar. Set aside.

 

 

In another bowl, combine the celery & apples, then fold in the dressing.

 

Line a platter or individual salad plates with lettuce leaves and spoon on the dressed salad mixture.

 

Garnish with the grape halves, cherries and nuts.

 

 

Serves four to eight, depending on menu.
