Butter Lettuce & Summer Fruit Salad with Almonds & Feta

Ingredients

Cheese  

1/2 cup fresh goat cheese at room temperature

1 Tbsp finely chopped chives

1 Tbsp fresh thyme leaves, minced

½ tsp Kosher salt

Freshly ground black pepper

 

Dressing 
Juice of one lime
2 Tbsp. orange juice
2 Tbsp. sour cream
6 strawberries, trimmed, halved
1 Tbsp. red wine vinegar
3 Tbsp extra virgin olive oil
Kosher salt & freshly ground black pepper

 

Salad
1 head "living" butter lettuce, cored.  Leaves rinsed, dried & trimmed
1 basket, about 2 cups fresh strawberries, trimmed and sliced (use six for dressing)

Directions

Combine the goat cheese, chives, thyme, salt & pepper in a mixing bowl.  Form into four little "disk" shaped pieces.  Press press on the toasted almonds.  Set aside.   

 

Combine the dressing ingredients in the bowl of a food processor and process, pulsing at first until a smooth dressing is formed.  Adjust seasonings. 

 

Divide the leaves among four salad plates and with half the dressing.

 

Garnish each salad with a goat cheese round.

 

Serve the salads and pass the remaining dressing.
