CHILLED AVOCADO SOUP WITH CANADIAN BAY SHRIMPBy KSEE NewsIngredients4 Haas avocados peeled and pitted 2 cups chicken or vegetable stock ½ cup sour cream 1 small garlic clove Juice of one lime ½ tsp cayenne pepper Kosher salt & freshly ground black pepper, to taste ½ lb. Canadian bay shrimp, preferably the larger ones Minced chives or green onion for garnish
DirectionsPlace the all ingredients except salt, pepper and shrimp, in food processor and puree until smooth. Season with salt & pepper to taste. Refrigerate covered for a couple of hours. Soup should be very cold.
Serve in chilled bowls or cocktail glasses and garnish with the shrimp and chives. |
