Chicken Enchiladas
By KSEE NewsIngredientsEnchilada Ingredients Sauce Ingredients: Garnishes: green onions & sliced black olives DirectionsMake the sauce: Gradually stir in the tomato sauce, water, cumin, garlic & onion powders until sauce is smooth. Reduce heat and slowly simmer sauce for 10 minutes. Season with salt & pepper. Prepare Enchiladas: Dip tortillas one at a time in the hot sauce to moisten and stack them on a dinner plate. Spoon about 3 ounces of the filling mixture across the center of each tortilla. Roll the enchiladas & line them up in a large greased casserole dish. Spoon the sauce generously over the casserole and sprinkle with the cheddar cheese, green onions and black olives. Bake until very hot and the cheese begins to brown.
