8 oz salami, finely diced
1 red bell pepper, grilled, julienned
1 yellow bell pepper, julienned
1 cup finely chopped green onion
4 cups packed arugula (may substitute baby spinach or watercress)
1/4 cup pitted Nicoise olives
3/4 cup extra virgin olive oil
1 T minced fresh garlic
2 T whole grain mustard
1/2 cup Italian red wine vinegar
12 or more large basil leaves, torn into small pieces
Sea salt & freshly ground black pepper, to taste
