Maple and Black Pepper Bacon

Ingredients

Here’s a way to make bacon reallllly special with a minimum of effort.  Once you try it, you’ll be bored with the plain stuff.

1 lb thick-sliced smoked bacon (applewood or maple smoked is excellent)
1 small bottle Vermont or Canadian maple syrup
Freshly ground black pepper

 

Directions

Pre-heat oven to 375F with racks in

Arrange the bacon on a baking rack set on a sheet pan.  Bake in oven for about 20 minutes, or until the fat is mostly rendered, but bacon is not yet crisp.
Remove pan from oven and, using a pastry brush, brush generously with maple syrup.  Return to oven for another 5 minutes.  Repeat with another layer of syrup.  Return to oven and cook until crisp.  When it’s done, try some and try not to eat too much.
