Belgian WafflesBy Megan ValentineIngredientsWhipped Cream:2 cups heavy cream 2 T sugar 1/2 tsp. vanilla extract Waffle Batter: 1 1/4 cup all purpose flour 2 tsp. baking powder 1/4 cup sugar 1/4 tsp. salt 4 large egg yolks 1 1/2 cups milk 1 tsp. vanilla extract 1/2 cup melted butter 4 egg whites Topping: powdered sugar fresh peaches or berries DirectionsPre-heat waffle iron.Whip cream, sugar and vanilla to soft peaks. Cover and keep in refrigerator. Sift together the flour, baking powder, sugar and salt onto a plate. Beat egg yolks, milk and vanilla, and add the melted butter. Add the dry ingredients and mix until just combined. In a clean bowl, beat the egg whites to soft peaks and gently folk into batter. Ladle batter into waffle iron, and cook until crisp and golden brown, about four minutes. Top with whipped cream, fresh peaches or berries and a generous dusting of powdered sugar.
