Angel Hair Pasta with Sun-dried TomatoesBy Megan ValentineIngredients2 servings Angel Hair Pasta2 T olive oil 2 T garlic, minced ½ cup sun-dried tomatoes, drained 2 oz goat cheese 2-3 leaves of fresh basil, torn into small pieces 3 T Parmesan Reggiano DirectionsCook pasta according to package. Drain, reserving 2 T pasta water. Rinse pasta under cold water, drain and set aside.Heat olive oil in large skillet over medium high heat. Add garlic and cook just until it begins to brown. Add sun dried tomatoes. If needed, plunge pasta into hot water to reheat and drain. Add pasta and reserved pasta water to garlic and tomatoes and toss. Place pasta on serving plate and top with tomato-garlic mixture. Top with goat cheese, basil and grated parmesan.
