Chopped BLT Garden Salad

Ingredients

Dressing
1/4 cup red wine vinegar
3/4 cup extra virgin olive oil
1 large shallot, minced
2 cloves garlic, minced
1 tsp. sugar
Kosher salt & freshly ground black pepper, to taste

Salad
8 slices crisp bacon, diced 1/2"
4 cups diced vine-ripe tomatoes, diced 1/2"
2 heads romaine hearts, chopped 1" dice
1 english cucumber, chopped, 1/2" dice
1 yellow bell pepper, cored, seeded & dieced 1/2"
1 1/2 cups diced smoke gouda, diced 1/2" (or shaved parmesan)
1 firm-ripe Haas avocado, diced 1/2"
1/2 cup loose packed, roughly chopped basil

Directions

Whisk the dressing ingredients together. Adjust seasonings and set aside.

In a large salad bowl, toss the bacon, tomatoes, romaine, cucumber, bell pepper and the gouda with the dressing. Serve salad on chilled plates and garnish with the diced avocado.
