Marinated Chevre Log with Crostini

Ingredients

1/2 cup extra virgin olive oil
four garlic cloves, smashed
1/2 tsp. dried chili flakes
2 T minced fresh chives
1 T minced fresh thyme
1 T minced fresh dill
1/2 tsp kosher salt
freshly ground black pepper
1 12-ounce log mild young goat cheese (Chevre)

Directions

Place the log of cheese in a small casserole or baking dish.

Heat the olive oil over medium low heat and add the garlic and chili flakes. Allow the garlic to cook gently, stirring occasionally for about 5 minutes to flavor the oil. The garlic should brown lightly.  Remove and discard the garlic cloves. Set oil aside to cool.

Stir remaining ingredients into the oil, taste and adjust seasonings if needed.  Pour the mixture over the log of chevre and roll the log to coat well.  You may keep the cheese covered in the refrigerator for a week or more, turning occasionally for even marinating. The cheese should marinate at least overnight, and improves for a week or more.

Bring to room temperature before serving. Serve as a spread with baguette or crostini or crumbled on salads or fruit. It's also a great topping for a just off the grill steak.
