Sauteed Spinach with Pinenuts and Golden Raisins
Serves four as a side dish.
1 Tbsp extra virgin olive oil
¼ cup golden raisins
2 Tbsp pinenuts
2 lg. cloves garlic, minced
1 10 oz bag fresh baby spinach
1 Tbsp Balsamic vinegar
Kosher salt, to taste
Parmesan Cheese, shaved as garnish
Freshly ground black pepper
Heat oil in a large nonstick skillet over medium higth heat. Add raisins, pinenuts and garlic; cook, stirring, until fragrant, about 30 seconds. Add spinach and cook, stirring, unil just wilted, just a minute or two. Remove from heat and stir in the vinegar and salt. Shave a little parmesan over the spinach and finish with a few turns of black pepper. Serve immediately.
