Just in time for Thanksgiving meal planning, the Chef has a delicious recipe for Maple Sweet Potato Mash that's sure to please a crowd.
Ingredients
2 lbs sweet potatoes, peeled and cut into 1” chunks
cold water to cover
4 ounces, (1 stick) softened butter
4 ounces heavy cream
1/2 cup maple syrup
1 Tbsp Kosher salt
1 tsp. freshly ground black pepper
1 tsp ground cinnamon
toasted pecans and crisp bacon (optional garnish)
Instructions
Place the sweet potatoes in a large sauce pan with water to cover, and bring to a boil over high heat. Cover pan and reduce heat to low. Cook until tender, about 30 minutes. Drain the sweet potatoes of any remaining water and return sweet potatoes to the pan.
Add the cream, maple syrup, salt, pepper and cinnamon and mash mixture with a potato masher until texture is very smooth. Taste and adjust seasonings.
Store covered in the refrigerator until needed, or serve immediately.
To serve later: Reheat in saucepan over low heat, stirring occasionally until piping hot.
This is an excellent accompaniment to pork and poultry dishes. A great dish for winter holiday entertaining.
