The Chef: Waldorf Salad

Chef Roy Harland from the Elbow Room is helping us get ready for Thanksgiving with a delicious Waldorf Salad that's sure to please a crowd.

4 Tbsp. fresh lemon juice
2 Tbsp. granulated sugar
pinch of salt
½ cup mayonnaise
½ cup whipping cream, whipped to stiff peaks
1 Granny Smith apple, cored and diced ½"
1 Red Delicious apple, cored and diced ½"
1 Fuji apple, cored and diced ½"
2 ribs celery, peeled & thinly sliced
1 cup seedless grapes, halved
12 butter lettuce or romaine leaves for serving
½ cup walnut or pecan pieces

Vigorously whisk together lemon juice, sugar & salt in a large salad bowl.

Add mayonnaise and whisk to combine well. Gently fold in the whipped cream. Fold in the apples, celery and grapes. Serve in lettuce cups, garnished with the pecans
