The Chef: Drunken Melon Salad

1 fresh lime wedge
Kosher Salt
6 or 7 cups fresh melon, seeded and cubed (watermelon, Crenshaw, honeydew, etc.)
1 cup strawberries, sliced
1 T chiffonade of fresh mint
2 ounces fresh lime juice
2 ounces fresh orange juice
1 T orange zest
3 ounces tequila
1 ounce Triple Sec liqueur
3 T sugar
Fresh mint for garnishing

Spread some Kosher salt about 1/4" deep on a saucer. Moisten the rims of four margarita or martini glasses. Carefully dip the glasses in the salt to lightly coat the rims. Set aside.

In a large mixing bowl, whisk together the orange & lime juices with the zest, mint chiffonade, tequila, Triple Sec and sugar until it dissolves. Add melon and strawberries to the bowl and toss gently to coat. Divide the salad among the salt-rimmed glasses and serve, garnished with fresh mint.
