The Chef: Black Bean and Corn Salad (Updated recipe)

BLACK BEAN & CORN SALAD

2 15-ounce cans black beans, rinsed
2 cups cooked fresh tender corn
1 red bell pepper, core removed and diced ¼"
1 small red onion, diced ¼"
1 cup loose packed cilantro, coarsely chopped
1 jalapeno pepper, seeds & stem removed, minced
1/3 cup olive oil
2 Tbsp red wine vinegar
Kosher salt & freshly ground black pepper to taste
Lime wedges to garnish

Combine all ingredients in a mixing bowl and mix well.
Serve on a platter garnished with lime wedges.
