Chicken Salad in Romaine Leaves

Ingredients
For the salad:
2 cups Romaine leaves, washed, dried and torn
prepared roasted chicken breast, sliced
1 avocado
1 orange, peeled and remove membranes by slicing between orange sections
1/4 cup red onion, cut vertically into thin slivers

For the dressing:
1 T shallots, minced
1/4 cup sherry vinegar
1/4 cup extra virgin olive oil
pinch salt
pinch pepper

Directions
Combine dressing ingredients in small bowl and use whisk or immersion blender to mix together.

Place torn lettuce leaves in a large bowl and toss with half of dressing. Divide lettuce and place on serving plates. Scoop avocado out of shell and slice avocado lengthwise. Arrange avocado and chicken slices on lettuce leaves. Top with orange sections and thinly sliced red onion. Drizzle remaining dressing over chicken, avocado, oranges and onions.
