London based Salvatore Calabrese is one of the leading bartenders in the world, and is also behind Mixology 101 where he is holding a master class.

"You can be a great mixologist but it doesn't make you a great bartender. You have to be both," said Salvatore Calabrese "The Maestro."

His art is about pleasing the senses. "Remember a great cocktail has to satisfy at least three levels - the eyes, the nose and the mouth," said Calabrese.

From the Breakfast martini to the Hollywood Bubble, Calabrese has created more drinks than he can count.

"Spicy50 is by far one of the most popular cocktails here in Mixology 101. Vanilla vodka, a little bit of citrus, elderflower cordial... And now I am going to glaze the drink. For glazing, I'm using honey. And the fresh chili," said Calabrese.

He says the Spicy50 is a perfect companion to the chicken wings.
