Pasta and Asparagus with Creamy Lemon Garlic Sauce
Prep time: 5 minutes Hands-on time: 15 minutes Serves 4
What you’ll need:
•12 oz short cut pasta (penne or fusilli work well)
•2 tbsp olive oil
•1 tbsp butter
•5 cloves garlic, minced
•1 bunch of asparagus, cut into 1″ pieces (look for thinner spears)
•1 lemon
•2 c. sour cream (you may use light)
•1 tsp. kosher salt
•shredded parmesan cheese and pepper to taste for serving
What to do:
1.Prepare the pasta to al dente as directed on the package.
2.While the pasta is cooking, heat the olive oil and butter in a large pan over medium heat. Add the garlic and stir. Allow to heat for one minute. Do not allow to brown. Add the asparagus and stir.
3.Continue cooking the asparagus until slightly tender, approximately 5 minutes.
4.Zest the lemon, and reserve zest. Add the juice of the lemon to the pan with the asparagus and stir.
5.Remove the pan from heat and add the sour cream, salt and lemon zest. Stir until creamy and melted.
6.Toss the pasta in the pan with sauce and asparagus. Serve warm and topped with shredded parmesan cheese and pepper.
