Cilantro Lime Shrimp & Pineapple Fried Rice

Pineapple Fried Rice

1c. Long Grain Rice
2c. Water
1/2 Red Onion finely chopped
1/4 C. Pineapple 1/4" cubes
2 Cloves Garlic finely chopped
2tbsp Rice Vinegar
3tbsp Olive Oil
2tbsp Soy Sauce
Juice of 1 Lime
1tbsp Cilantro Chopped
1tsp Toasted Sesame Seeds

Brink Water, Rice Vinegar, and one tablespoon Olive Oil to a boil in a small pot. Add Rice and turn the heat down to low. Keep rice at a simmer for 25min or until the liquid is absorbed. Fluff Rice with a fork and set aside. Pre-heat a large non-stick pan. Using two tablespoons of Olive Oil saute your onion, pineapple and garlic. Once the onions are soft and translucent add your rice. Drizzle in your Soy Sauce and stir with a wooden spoon. Keep the rice moving to avoid burning. Once the rice has started to brown, add your Lime Juice and Cilantro. Cook for just a few minutes more then add your Sesame Seeds. Remove from heat until you're ready to serve.

Cilantro Lime Shrimp

1lb Large Jumbo Shrimp
1Tbsp Olive Oil
Juice of 1 Lime
1Tsp Chopped Cilantro
Salt & Pepper

Marinate Shrimp in mixture of listed ingredients. Put 4-5 Shrimp on a skewer. Heat a grill pan or bbq to high heat and cook 2-3min on each side.
