Bison Tacos with Fetta cheese and Mango Salsa

Delicious Bison Tacos w/ Fetta Cheese!

From Ordinary to Extraordinary- try Bison!
We had our usual Labor Day gathering with lots of appetites, trying to add a bit of culinary imagination I came up with this healthy, easy, quick fix and it was such a crowd pleaser I thought I would share.

Bison Tacos with Fetta Cheese on Stone Ground Tortillas paired with Mango Salsa
Prep Time: 30 minutes Makes: 4-6 servings

Tacos
1lb- ground Bison (from local grocers)
1 fresh clove garlic crushed
1 tbsp. favorite taco seasoning
¼ white onion finely chopped
½ cup Fetta Cheese crumpled
3 small ripened Roma tomatoes chopped
Spring mix lettuce chopped
1 Pkg stone ground corn and whole grain tortillas

Brown the ground bison meat in medium skillet -add onions, garlic and taco seasoning of choice, simmer for 4-5 minutes. Warm tortilla to liking (ie. With small amount olive oil) assemble tacos and sprinkle Fetta cheese.

Mango Salsa
2 - Fresh mango chopped
4 Small organic acid free orange tomatoes
2 tbsp. red onion finely chopped
11/2 tsp. minced fresh ginger

Combine in bowl allow to chill in refrigerator for 10 minutes- serve atop or as side to Bison Tacos
